Can I just tell you about something that BLEW my mind this week?
It’s SO SIMPLE and it’s SO GOOD!! It’s just greens (in this case, baby chard, baby kale, baby spinach), 2 over easy eggs, and a drizzle of EVOO and Balsamic Vinegar with salt and pepper.
It’s AMAZING. When you break into the ooey gooey yolk, it mixes with the tart sweet Balsamic Vinegar and makes the most AMAZING “dressing” that coats the greens with a delicious creamy yumminess.
I’ve made this 3 times in the past 2 days – for lunch, dinner, and even breakfast. You need to try it! I love my eggs with crispy edges, and a completely runny yolk. I personally think the runny yolk is what makes this salad so amazing, but you make your eggs the way you want!
The bonus (other than it being SO GOOD), is that you get your greens in, it’s a hearty salad so you’re full until lunch (or dinner or breakfast), it’s so simple, and it’s CLEAN.
