Alex and I have been trying so hard to become more healthy lately, which means smoothies for breakfast (although he keeps asking if I can add ice cream to his smoothies in the morning) and us eating a LOT more vegetables than we have in the past! I’m in the beginning of a 21 Day Fix which has been really helpful in becoming more mindful of what I’ve been eating daily (and keeping me moving with daily workouts!).
We’ve had this salad several times for dinner already – it’s a great way to eat more vegetables, and it’s SUPER filling! Alex was actually really surprised at how good it was, which is great since the boy does not like to eat green things (he’s a mostly meat and potatoes kinda guy!).
I am OBSESSED with the rotisserie chicken at Costco. Alex is too!! It’s only 4.99 and it’s always been super moist and fall off the bone good. I like to buy it, wait for it to cool (usually while munching on a drumstick), then shred it and keep it in a container in the fridge, to be added to salads and sandwiches as needed through the week. It usually lasts us several days! One rotisserie chicken usually equals about 4-5 cups of shredded meat.
I created a quick dressing with some honey, olive oil, apple cider vinegar, Sriracha, and whole grained mustard. Shallots and crushed garlic would’ve been good in this as well!
You can add any other vegetables you want, and I’ve really enjoyed eating more greens! I look forward to eating this for lunches and dinners, and with the addition of different vegetables (and a different dressing!), it’s like a different meal!
