Last pizza post for this week, I swear!
I had all this pizza dough in my fridge, and I was working from home, and was looking for a simple and easy lunch. I had leftover roasted butternut squash, so cut up the large pieces into smaller “pizza” sized pieces using my trusty kitchen shears.

I pulled my dough from the fridge, let it rest for about 30 minutes on my counter, shaped it and put it on my preheated grill. 5 minutes later, I pulled it and flipped it upside down to top the grilled marked side with my pizza toppings!
This one was SO easy – leftover butternut squash, caramelized onions, and handfuls of mozzarella cheese. Once the cheese was melted, I pulled it, and ate outside in the gorgeous summer weather with a drizzling of Mike’s Hot Honey. I was introduced to this honey at Paulie Gee‘s – an AMAZING pizza place in Brooklyn that blew my mind on how to use honey on pizza! It adds this awesome sweet spicy vinegary taste to the pizza. SO GOOD.

They’re filming a movie on my block today, so I watched them setting up the movie set while I ate my pizza!
