Bahn Mi Pizza

So my brother and his family came over for dinner, and I love making pizzas when we have company. It’s easy, and you can literally throw anything on top of pizza and make it taste delicious!

I’ve been on a pickled radish kick lately, and with plenty of pulled pork, I was looking to jazz things up a bit. Then it hit me – Bahn Mi Pizza!! What could go wrong??

Our ingredients:

Pizza dough (homemade or bought), shredded mozzarella, pulled pork, pickled radish, sliced cucumbers, mayo, Sriracha sauce, and Hoisin sauce.

I made a Sriracha mayo – one part Sriracha to 3 parts mayo, so I mixed 1 Tbsp Sriracha and 3 Tbsp mayo.

P1020191Grilling pizzas are one of my favorite things about summer! Keeps the kitchen cool, and I can hang out with everyone outside while I’m “cooking”.

Like our Pulled Pork BBQ Pizza, preheat the grill on high for at least 10 minutes so that the inside can get nice and hot. Oil the grill with a paper towel and some olive oil, then place the dough directly on the grill, and close the hood. After 5 minutes, pull the dough from the grill, and close the hood. Flip the dough so that the cooked, grill marked side is up.

For the Bahn Mi Pizza, I used Hoisin as the base, then added the pulled pork and hand fulls of mozzarella cheese.

P1020210Close the grill cover until the cheese melts, around 3-4 minutes. Then remove from heat, and spread cucumbers, pickled radishes, and the Sriracha mayo. My brother remarked that it tasted like “peking duck” pizza due to the hoisin sauce! Which may be something to explore sometime in the future. 🙂

I’m getting so much use from the pulled pork I made! It’s made several filling meals, and I’m a fan of whipping up dinner by re-imagining leftovers. What are your favorite uses of leftovers?
